Prosciutto Wrapped Asparagus Spears

Take asparagus to the next level with this delicious recipe!

Ingredients:

  • 1 bunch of fresh asparagus spears

  • 2 oz thinly sliced prosciutto or dry cured ham

  • 2 scallions, thinly sliced lengthwise

  • Coarsely grated asiago cheese

  • Phat Olive’s EVOO of your choice

  • Phat Olive’s Traditional Balsamic Vinegar

  • Sea Salt and Freshly ground black pepper

Directions:

Preheat the oven to 400F. Line a large sheet pan with parchment paper and set aside.

Rinse and pat dry the asparagus. Remove the bottom 1- 2 inches of the asparagus spears and discard.

Cut Prosciutto lengthwise into 2-inch wide strips, and cut the scallion strips into 3-inch lengths. Place a few scallion strips next to the asparagus spear and wrap tightly with the Prosciutto allowing the top of the spear to show.

Place the the asparagus on the lined sheet pan and drizzle with olive oil. Sprinkle salt and of black pepper on top.

Bake the asparagus for 8 to 10 minutes. When done, the asparagus will be bright green and easily pierced with a fork, and the prosciutto will be crisped around the edges.

Place on a serving dish, drizzle with the Balsamic Vinegar, and top with Asiago cheese, sea salt and pepper. Serve immediately while hot
