Balsamic Cucumber Salad

This fast, fresh salad is a winner at every party. It's an easy and healthy side dish for just about anything!

Ingredients:

  • 2 large cucumber, halved and sliced

  • 1 cup grape tomatoes, halved

  • 1 medium red onion, halved and thinly sliced

  • 1 ripe avocado, diced

  • 2 cloves garlic, pressed or minced

  • 3/4 cup crumbled reduced-fat feta cheese

  • 3 tbsp Phat Olive’s EVOO of your choice

  • 2 tbsp Phat Olive’s Traditional Balsamic

  • Salt to taste

Directions:

In a medium bowl, whisk together the olive oil, balsamic vinegar and garlic until blended. Season to taste with salt and pepper.

Add the rest of the ingredients to the bowl and toss to combine. Season with additional salt and pepper if necessary. Serve immediately.
