Classic Bruschetta
Ingredients:
1/4 cup Phat Olives’s Tuscan Herb Olive Oil
1 1/2 tbsp minced fresh garlic
26 oz. roma tomatoes, diced (about 7-8)
1/4 cup finely shredded parmesan cheese
1 tbsp Phat Olive’s Traditional Balsamic Vinegar
3/4 tsp kosher salt
1/2 tsp freshly ground black pepper
1/4 cup chopped basil ribbons
1 loaf hearty french bread, sliced into 1/2-inch thick slices
Directions:
Preheat oven to 450F. Line a baking sheet with parchment paper.
Dice your tomatoes and transfer them to a medium mixing bowl. Stir the salt, onion, basil and garlic into the tomatoes. Set the mixture aside to marinate while you work on the bread.
Slice your baguette diagonally into pieces no wider than ½-inch. Lightly brush both sides of each slice with olive oil. Place the slices in a single layer on your prepared baking sheet and bake them on the middle rack for 6 to 9 minutes, until they’re crisp and nicely golden on top. Transfer the toasts to a serving platter, if desired, and set aside.
When you’re ready to serve, add the remaining 2 tablespoons of olive oil. Stir to combine, and season the mixture with additional salt, to taste.
Top each toast with tomato mixture. Lightly drizzle a couple of tablespoons of balsamic vinegar on top, and sprinkle with parmesan.
Serve immediately.
