Crispy Gnocchi with Mushrooms
Tender crisp gnocchi tossed with sautéed mushrooms make this a very comforting and incredibly easy meatless dinner.
Ingredients:
1 cup Chopped White Mushrooms
1 tsp Soy Sauce
2 Garlic Cloves, Grated
1/2 tsp Lemon Zest
1-12oz Package of Gnocchi
1/4 cup Chopped Parsley
Thinly Sliced Scallions
Kosher Salt & Pepper
1 tbsp Phat Olive Picual EVOO
Directions:
In a nonstick skillet over medium heat, cook the white mushrooms in the Milanese Gremolata Olive Oil until golden (8-10min). Next, stir in soy sauce, grated garlic cloves and lemon zest; transfer to bowl and set aside. Using the same skillet, cook gnocchi with the Picual EVOO. Stir and cook until crispy about 5 minutes. Gradually stir in mushroom mixture and the chopped parsley. Season with salt, pepper and garnish with scallions.
