Baked Salmon with Blueberry Balsamic Reduction
This rich blueberry glaze brings great flavor and color to salmon.
Ingredients:
4 - 6 oz Salmon Fillets
3/4 cup Blueberries
2 tbsp fresh Rosemary, chopped (or 1 tsp dried)
Directions:
Preheat oven to 375°F. Place fillets in a shallow baking dish. Bake about 15 minutes until juices run clear & salmon flakes easily with a fork.
Add balsamic and blueberries to a saucepan. Bring to a boil then turn heat to low. Use a wooden spoon to smash the blueberries and stir occasionally for 5-10 minutes until it is thick. Stir rosemary into sauce.
Plate salmon and pour sauce over the fillets individually.
