Coconut White Balsamic Chicken Fingers

These chicken fingers have an island-inspired twist that can be an easy weeknight meal or a party appetizer! They will quickly grow to be a weeknight favorite.

Ingredients:

  • 4 large skinless, boneless chicken breast, cut into 1/2-inch-thick strips

  • 3 tbsp Phat Olive Coconut White Balsamic Vinegar

  • 3 tbsp Phat Olive EVOO

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • 1 cup flour

  • 1 cup whole buttermilk

  • 1 large egg

  • 1 1/2 cups unsweetened flaked coconut

Directions:

Sprinkle chicken with salt and pepper. Place flour in one shallow dish. Combine buttermilk, coconut balsamic and egg in another shallow dish, stirring well. Place coconut in a third shallow dish.

Dredge chicken in flour and shake off excess. Next, dip chicken in egg mixture then dredge in coconut. Heat a large skillet over medium-high heat. Add oil to pan and swirl to coat. Add chicken to pan and cook 6 minutes or until done.
